Potato salad...re-imagined.

i remember the first time i found out that the traditional potato salad contained eggs...needless to say, its been a long time since then, however, the potato salad has stayed the same throughout the years.

Don't get me wrong, potatoes, mayonnaise, eggs and onions make an awesome team, but i think we can make it just a bit more..."YAAAS"


Enter, the best potato salad (in my humble, biased opinion)...IN THE WORLD! i just happened to be cooking for my family (no surprise there), and I felt bored with the timeless potato salad. so, the magic sort of just...happened.


using a handful of really easy and affordable products, i managed to turn the typical into fantastic...the ordinary into highly extraordinary (i say this with all the modesty i can possibly conjure up)


You need the following ingredients:

-potatoes (obvs) about 1 kg

-olive oil

-salt

-mayonnaise (1 1/2 cups)

-wholegrain mustard (3 tablespoons)

-Greek yogurt (3 tablespoons)

-3 cloves of garlic, finely chopped

-chives (to taste)

-basil (to taste)

-1 red onion (quartered and thinly sliced)


and honestly...that's all there is to it.


start by cutting your potatoes into quarters, and placing them into a roasting pan, add a thin coat of olive oil, followed by a sprinkling of salt. roast the potatoes until they are nice and golden.


next, mix the mayonnaise, mustard, yogurt, garlic, chives, basil and the red onion together, and try not to finish it before adding it to the potatoes.


once the potatoes are done, place them into a mixing bowl and then add the mayonnaise mix and combine well. transfer to a serving dish, and listen to everyone praise the ground you walk on...
